Happy St. Patrick’s Day everyone! I decided this year to try making Shamrock buns/cupcakes after I saw this tutorial on easy-cake-decorating.com. I’m not a HUGE fan of butter-cream frosting (or at least, when it’s piled so high on cakes that there is more cream than cake!). So, for my first attempt I decided to use fondant icing instead. I used candy-covered cereal for the eyes, and a chocolate pencil for the mouth. As you can see, they were more than a little wonky:
I had several problems: I used queen cake/fairy cake cases rather than muffin cases, so the batter rose out over the case too much, making the shape undefined. Then, the fondant icing was too liquid, and dripped out over the edges, making the icing on top too thin, and the whole thing look too messy. (I can tell you that they were, however, very very tasty…)
If at once you don’t succeed, try try again! So today, I had another attempt. This time, I did use the muffin cases. Also, I put the marbles (see the tutorial) around the cases AFTER I put in the batter, this was much much easier and less messy. The batter had enough space to rise nicely without going over the edges. This time, I made butter-cream frosting, but I just piped a small layer of it onto the cakes. I also added more food colouring to the icing to give a deeper colour. I think they look much prettier!
They are lovely with a nice cup of strong Irish tea!
